Grilled Cornish Hens Recipe

  • 2 Cornish hens about 1 ¼ pound each
  • Rio Chicken Seasoning Marinade (in our recipes)


  1. Rinse the hens, pat them dry and cut the back bone lengthwise. Place them on a cutting board skin facing up and push hens down to flatten as much as you can
  2. Prepare the marinade accordingly; place the hens inside a large (1 gal.) sealed bag and pour the marinade over them. Seal the bag and toss it to mix the contents evenly
  3. Refrigerate it for at least 4 hours or overnight
  4. Remove hens from refrigerator 30 minutes before grilling saving some of the marinade to brush over the hens as you are grilling
  5. Light the grill; wait till the charcoal gets a gray ash. Place hens skin facing up and cover the grill for 5 minutes
  6. Open grill and turn the hen skin side down, if fire is too hot, move chickens to a cooler side of grill, alternating it back and forth from hot to cooler spot and flipping the hens to either side until the internal temperature at the thickest part of the birds reach 165 degrees F or until the juices run clear About 25 to30 min
