Delicious Rio Seasoning Zucchini Strips
½ cup grated parmesan cheese
1 egg (beaten)
1 tablespoon Rio seasoning (Chicken)
Preheat the oven to 375 F.
Cut off the ends of the zucchinis then cut them in half width-wise and them into 6 sticks length-wise (each stick should be about ¾ of an inch thick)
Roll the zucchini sticks evenly in the beaten egg making sure there is no egg dripping off.
In another plate, mix together the parmesan cheese and the Rio seasoning. Roll the egg coated sticks into this mixture, coating all sides evenly.
Place the zucchini pieces in a non sticking baking sheet so they are not touching each other. (You can spray the baking sheet with oil or place a non sticking aluminum foil).
Bake about 20 minutes. (They are going to be golden brown).
